Overnight Oats with Berries and Almonds
My mornings in Helsinki used to be a frantic search for coffee until my friend, Anna, showed me a better way. We'd often go for early hikes in Nuuksio National Park, and I was always amazed by her calm, sustained energy. Her secret was a simple jar she'd pull from her bag. This is my version of that magic. The real technique here is transforming the oats overnight; they soften into a creamy, digestible porridge without any cooking. It’s a small act of kindness for your future self. You'll wake up to a breakfast that feels like a hug in a jar, providing deep, grounding energy for the day ahead.

- 50 g Rolled oats (use certified gluten-free if needed)
- 1 tbsp Chia seeds
- 100 g Plain Greek yogurt or kefir
- 120 ml Unsweetened almond milk (or milk of choice)
- 1 pinch Pinch of sea salt
- 1 tsp Pure maple syrup (optional)
- 25 g Raw almonds, roughly chopped
- 80 g Mixed fresh or frozen berries (raspberries, blueberries)

Instructions
In a jar or container with a lid, combine the rolled oats, chia seeds, Greek yogurt, almond milk, sea salt, and maple syrup (if using).
Stir very well until everything is fully combined and there are no clumps of chia seeds. Seal the jar and place it in the refrigerator for at least 4 hours, or preferably overnight.
In the morning, give the oats a good stir. If it seems too thick, you can add another splash of almond milk. Top with the chopped almonds and fresh berries just before serving.
Chef's Tip
For an even deeper flavor, toast the almonds in a dry pan over medium heat for 3-4 minutes until fragrant. Let them cool completely before using. This small step makes a world of difference.
