- 1 medium Red Bell Pepper(Diced)
- 1 cup Cherry Tomatoes(Halved)
- ½ medium Red Onion(Finely chopped)
- ½ cup Kalamata Olives(Pitted and halved)
- ¼ cup Fresh Parsley(Chopped)
- ¼ cup Fresh Mint(Chopped)
- 3 tablespoons Lemon Juice(Freshly squeezed)
- 4 tablespoons Extra Virgin Olive Oil
- 1 clove Garlic(Minced)
- ½ teaspoon Salt(To taste)
- ¼ teaspoon Black Pepper(To taste)
