- 4 6 oz Salmon fillets
- ½ cup Pistachios
- ¼ cup Fresh parsley
- ¼ cup Fresh dill
- 1 Garlic clove
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- ½ teaspoon Sea salt
- ¼ teaspoon Black pepper

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a food processor, combine pistachios, parsley, dill, garlic, olive oil, lemon juice, salt, and pepper. Pulse until coarsely chopped.
Place salmon fillets on the prepared baking sheet. Spread the pistachio mixture evenly over the top of each fillet.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve immediately. Garnish with extra fresh herbs and a lemon wedge, if desired.
